Are you looking for some comfort food? Well, look no further, this fried chicken recipe is delicious, full of flavor and best of all loaded with nutrition and healthy fats!
6-8 Organic all white meat chicken tenders
3 organic, free range eggs
1 cup coconut flour
1/2 cup almonds (minced in food processor)
Salt and pepper to taste
1/2 cup coconut oil
Rinse chicken in cold water and pat dry with paper towel. Beat eggs and put in semi shallow dish. Combine flour and almond mixture with salt and pepper to taste. (Always use celtic sea salt. It contains natural iodine which supports thyroid health.)
In a stainless steel frying pan (don’t use non stick because it contains chemicals that get released into your food) melt approximately half a cup of coconut oil on med-high heat. Coat chicken with egg mixture and then with flour/almond mixture. Place in frying pan and cook for about 5-6 minutes each side or until cooked through. Use all natural applesauce to dip in and enjoy! This is so yummy! Our son gobbled it up!
